Fire Crystal Persimmon (火晶柿)

Description

After softening, Fire Crystal persimmon becomes a brilliant red, resembling a fiery ball, and appear crystal-clear, hence the name “Fire Crystal persimmon.” The Lintong Fire Crystal persimmon is a historically renowned specialty of the Lintong District in Xi’an City. The fruit is flat and round, with a vermilion-red surface that is fine, smooth, and vibrant. The fruit is juicy, delicious, and uniformly sized, with an average weight of 65 grams. Fire Crystal persimmons are rich in nutrients, containing 19.73% soluble solids, over 16.9% sugar, 0.113% tannins, and 2.33 milligrams of vitamin C per 100 grams of pulp. Notably, they have an extremely high sugar content, primarily consisting of glucose, fructose, and sucrose, with very low acidity. This makes them exceptionally sweet, earning them the title of “The Sweetest Golden Fruit.” As a beloved fruit, Fire Crystal persimmons are famous both domestically and internationally, and they are one of Shaanxi’s most well-known local specialties.
