Description
Also known as Qingxu Red Apricot, is a specialty of Qingxu County, Taiyuan City, Shanxi Province, and holds a National Agricultural Product Geographical Indication.
Shajin Red Apricots feature thin skin, large size, and small pits. The fruits are laterally flattened and round, with an appealing shape and beautiful golden-yellow color. The sun-exposed side has a pink hue with red speckles. The fruit top is flat to slightly sunken, and the stem cavity is deep. The fruit diameter ranges from 4.0 to 5.8 cm, with an average weight of 56.9 grams, and the largest can reach 100 grams. They mature in mid-June.
The flesh of Shajin Red Apricots is dense, sweet-tart, juicy, and aromatic, with a semi-freestone pit. These apricots are rich in nutrients, containing 4.0–11.2 mg of vitamin C per 100 grams, 0.6–0.9 grams of protein, 8.5–11.0 grams of soluble solids, 165–173 µg of β-carotene, 0.9–1.4 grams of crude fiber, 248–265 mg of potassium, 8.0–11.5 mg of phosphorus, and 13.0–16.5 mg of calcium. They also include trace elements such as iron and vitamin B1, as well as various other vitamins.
These apricots can be eaten fresh or processed into dried apricots, apricot preserves, and canned apricots.
